It’s that time of year again- Invoca is “chopping it like it’s hot” and excited to celebrate National Grilling Month with our customers!

Easy Dry Rub for Smoked Meats
Combine equal parts of the following:
Mix well in a large container, and add to a shaker. Rub generously on desired meat for delicious crust when done.
Works best on Pork (Shoulder/Loin/Ribs) or Beef (Brisket/Ribs/roast).

Mexican-Inspired Marinade
1/4 cup white vinegar
3 tablespoons water
1/2 cup neutral oil (i.e. vegetable oil)
2 garlic cloves
1 1/2 tsp cumin
1 1/2 tsp Mexican oregano
1 1/2 tsp kosher salt
1 tablespoon achiote paste
Put all ingredients in the blender and blend together. Taste for seasoning, adjust if needed, then blend again. Pour over meat and marinate for 1-8 hours. Marinade works great with chicken and pork.
